
Several farms have recently been established in the mountains of the Negev within the framework of the unique project known as "The Wine Route in the Negev". The objective of this project is to reconstruct the agriculture and life style that once existed along the Spice Route in ancient times.
Hannah and Eyal Izrael, the founders of Carmey Avdat, have planted their vineyard on the ancient terraces that are part of the ruins of a 1,500-year-old agricultural settlement.
The winter cold and the summer dryness provide an ideal climate for growing wine grapes and served as the basis for he wine industry that existed here in ancient times.
The Cabernet Sauvignon and Merlot grapes grown on the farm are harvested by hand, and attention is devoted to every detail during the winemaking process. The wines of Carmey Avdat acquire a unique desert aroma, making them choice vintage varieties.
Carmey Avdat is a small family winery that produces approximately 6,000 bottles per year. The grapes are taken to the winery during the early morning immediately after being harvested and are placed in the fermentation vats. The fermentation process takes place at a temperature of 25 degrees Celsius, which preserves the unique aroma of the vineyard. This is the guiding principle for all decisions we make in the
winery.

Carmey Avdat is really worth a visit. I always take my tour groups there bacause of the warm welcome, good wine and a wonderful example of the Israeli pioneer spirit.
